Food vs beverage COGS

Every Sysco / US Foods / Restaurant Depot line gets split into COGS Food vs COGS Bev based on vendor SKU history. Liquor, beer, and wine each get their own GL bucket.

Tip splits & service charges

Toast / Square POS deposits are decomposed into gross sales, tips to gratuity payable, service charges to revenue, and processing fees to OpEx — automatic, every batch.

Third-party delivery

DoorDash, GrubHub, UberEats deposits arrive net of commission. We gross up the revenue, route the commission to Delivery commissions, and reconcile back to the POS daily summary.
