Why these three
A restaurant's books break in the same three places every month, and all three are invisible to the bank feed. Cash never reaches the bank in the amount the POS says it should. Tips sit on the balance sheet as someone else's money until somebody proves the account. And the daily sales entry — however accurate — describes what was sold, not what was collected. Each guide takes one of those and closes it.
